The WI Cookery School in Oxfordshire welcomes anyone with a passion for cooking to come and extend their range of skills and experience. The school caters for all levels of ability with courses for the novice cook to the accomplished chef – all with local and seasonal produce in mind. There is also a range of courses for families to attend, so even the smallest members of the family can get hands on!

Noodles are easy to prepare and good for lunch or a simple dinner.  This course will help you learn a variety of noodles and how to cook them in different ways. Like pasta in Italy and egg noodles in China, many countries have their own noodles.  You may not be comfortable to cook noodles that you’re not familiar with, but noodle dishes are easy to prepare, can be nutritious with creative ideas, and you can grow your confidence once you learn the ‘how-to’. In this course, we’ll pick up a couple of noodle types and prepare them in a more Asian style, both warm and cold.  You’ll also make your own fresh udon noodles.

As the nights draw in and the trees shed their leaves, join us to preserve Autumn fruits and vegetables for the year ahead, using the traditional methods championed by the WI. This course is practical with some tutor demonstrations. Learn how to make Autumn jams and pickles ( sweet and savoury), jelly, chutney, sauce and vinegar. At the end of the course there will be jars and bottles of eight different recipes to take home. For those who enjoy entering competitions, there will be hints and tips from the tutor who is an NFWI Preserves Judge. This course contains some pair work.

You will learn how four simple ingredients can be combined to produce wonderful breads. Following the success of Alison's Introductory bread course, she is now offering Bread Baking for the Home - Part 2 to extend your knowledge and skill base further. It is not essential that you have completed the first course but it is desirable that you already have a basic knowledge of bread. You will make an overnight dough, use the sponge method, practice shaping techniques and make a selection of breads  to include English muffins, pumpkin bread and a delicious buttery citrus Pan de Mie.

Parties are fun and events that need finger food can be difficult to cater for. Canapes are food in miniature and have traditionally been vol-au-vents, cocktail sausages, and finger sandwiches. It has also been easier to get pre-prepared canapes from supermarkets. But, yes, you can create your own canapes easily and quickly for your party or event. This course is designed to take the myths out making canapes and enabling you to do your own thing with canapes!

Louise will show you how to make a range of soft cheeses including Mozzarella, Halloumi, Mascarpone and Butter using domestic kitchen utensils. There are so many delicious treats that are made in Italy at Christmas time. In this class we will learn about the classic dish of Tortellini in Brodo, tiny pasta pockets filled with different meats and flavoured with freshly grated Parmesan and plenty of nutmeg, floating like little clouds in a rich chicken broth. We will make Panforte, that hard, flat confection that comes from Siena and is richly packed with nuts, candied fruit and spices; and Ricciarelli: orange scented almond biscuits that are so light and chewy, traditionally coated in a mantle of icing sugar so that they resemble snowdrifts. Finally, we will make the delicate hazelnut biscuits sandwiched around a chocolate filling known as Baci di Dama, which means Lady's Kisses. Included in the course will be : sourcing ingredients, choosing equipment, preparation and cooking fruit and vegetables, how to test pectin content, types of sugar and vinegar to use, how to test for a set, finishing and sealing preserves.
