The WI Cookery School welcomes anyone with a passion for cooking to come and extend their range of skills and experience. The school caters for all levels of ability with courses for the novice cook to the accomplished chef – all with local and seasonal produce in mind. There is also a range of courses for families to attend, so even the smallest members of the family can get hands on!

This November, escape to the Mediterranean with Alex. Autumn is a mystical time where the harvests of wild mushrooms, chestnuts and grapes set off a colourful landscape. This course is practical with some tutor demonstrations. Learn how to make Autumn jams and pickles ( sweet and savoury), jelly, chutney, sauce and vinegar. At the end of the course there will be jars and bottles of eight different recipes to take home. For those who enjoy entering competitions, there will be hints and tips from the tutor who is an NFWI Preserves Judge.

From Deli Rye and bagels, to Challah and Rugelach you will have a delicious journey with plenty of time to taste and make these breads, and find out about this rich legacy from the Jewish Kitchen and Bakery. Jewish breads like Jewish people come from all over the world. As Jews settled in Europe, other parts of the Middle East, North and South America, and India there was a meeting of cultures and food. Recipes evolved with time and created a legacy of delicious different breads savoury and sweet.

Alison Haigh grew up in an artisan bakery and she will be sharing her experience on this special weekend bread course. You will learn how four simple ingredients can be combined to produce wonderful breads. Recipes include rosemary and potato focaccia, cinnamon swirls, sultana and walnut loaf, and curried naan bread.

Join pastry chef and professional baker Katie to learn about making an array delicious breads and doughs using a variety of methods and ingredients, suitable for making at home. Recipes will include a garlic and herb focaccia, a cheese and cumin loaf, a sweet enriched dough, soda bread and a fig, hazelnut and honey rye bread. Katie will  also demonstrate doughnuts and a Moroccan flat bread for tasting during the course. One not to be missed.

You will start with baking using a tried and tested recipe for a well risen and firm cake with good keeping qualities which is perfect for celebration cakes. Then you will look at all the professional techniques to prepare your cake for decoration, cover with sugarpaste and add incredible decorative touches. You will be stacking, dowelling, crimping, colouring, making cut outs and flowers and even doing some royal iced piping. You will come away with everything you need to know to create amazing cakes of your own at home and some professional tips and secrets too.

As many preserves can be made throughout the year. Join us to make a range of recipes to keep, eat and share, using the traditional methods championed by the WI. This course is practical with some tutor demonstrations. Learn how to make a marmalade, jam, chutney, curd, pickle, syrup, and fruit in alcohol. For those who enjoy entering competitions, there will be hints and tips from the tutor who is an NFWI Preserves Judge. Included in the course will be : sourcing ingredients, choosing equipment, preparation and cooking fruit and vegetables, how to test pectin content, types of sugar and vinegar to use, how to test for a set, finishing and sealing preserves.
